This coming Tuesday is Pancake Day, aka Shrove Tuesday. Shrove Tuesday was originally all about indulging in the foods that you would then swear off during the fasting forty days of Lent. Since I’m not religious, I just enjoy delicious pancakes and then don’t give up anything for Lent. Woo!
To get us ready I thought I’d share a Best Pancake Recipe Round-Up for pancake day! Here are a few of my favourites and some recipes I’d love to try right away!
Classic Scotch Pancakes
I loved package scotch pancakes as a child (and secretly still do) and homemade ones are sooo good! They’re basically fluffy, thick american pancakes but with no special ingredients (and a foolproof Mary Berry recipe!).
Classic thin pancakes / crepes
With lemon and sugar, or filled with nutella and wrapped up, this is the classic pancake recipe you need. Just be sure to get your pan really hot before starting to cook them!
Fluffy Buttermilk Pancakes
These are my favourite go-to everyday pancakes! Buttermilk makes them tender and soft, but if you don’t have any, you can use plain yoghurt or milk with a little white vinegar added.
Blueberry almond pancakes
THICK tall pancakes are my eternal quest and just look at the height on these babies! Plus they’ve got all kinds of almond goodness going on, which as well as being delicious is kind of a bit healthy?
Funfetti Pancakes
Just fill your pancakes with colourful sprinkles, and all of a sudden things are a lot more FUN! These are great for birthdays or for entertaining kids with.
Red Velvet Pancakes
Okay, so these red velvet pancakes from Cooking Classy are fancy, and probably a little more work than your regular pancakes, but woah! They look amazing!
Chocolate Chip Pancakes
A handful of chocolate chips in the batter really elevates regular pancakes into something far more indulgent (and so so good with chopped strawberries!). Fantastic for a treat! This recipe is from one of my favourite blogs, Annie’s Eats.
Pumpkin Chocolate Chip pancakes
These pancakes taste like autumn. Pumpkin doesn’t have a strong flavour, just a mellow sweetness that pairs so well with cinnamon, nutmeg and ginger. These pancakes are packed full of chocolate chips too for a really delicious brunch!

I have never tried cake , These cake looks awesome!
It has been FAR FAR too long since I’ve made pancakes. I’m talking delicious, real pancakes (none of the ‘skinny’ pancakes I’ve been known for in my household – sorry Marty.) I gave up desserts for Lent but I promised him I’d make pancakes that first weekend afterwards. I’m trying to be more lenient with myself and what I eat now that I have Charlotte. I don’t want her to be as neurotic about counting calories as I have been.
I think the Scotch Pancakes or Chocolate Chip Pancakes sound the best to me π

I definitely vote for chocolate chips! And I agree, there’s nothing wrong with a treat breakfast every few weeks, especially when you’re making it for a gorgeous little family π
