Well hello! These no-bake Chocolate Coconut {Bounty} Protein Bites are raw, sugar-free and delicious! They taste literally like a healthy version of a bounty bar, but they’re packed full of protein, fibre and healthy fats, plus they’re naturally sweetened with just a touch of honey (or agarve/maple if you prefer!).
Sometimes you need a real heavy duty snack. The kind that will allow you to get home from work and head straight to the gym without so much as a tummy rumble, PLUS fuel you up for an awesome workout. Or the kind that will allow you to go straight out after work for cocktails without getting TOO tipsy. This my friends, is that snack!
So what’s in them? We’ve got
peanut butter
protein powder
almond milk
cocoa powder
a touch of honey + salt
rolled oats
cinnamon
coconut oil
flaked or dessicated coconut
BUT don’t let my recipe (think of it more as a guide) constrain you – these delicious energy bites are so customisable and easy to tweak. I sometimes add chopped nuts or some ground almonds. If you don’t like peanut butter, use almond butter OR if you don’t like either, leave it out completely and add a touch more coconut oil and almond milk. What you’re looking for is a sticky consistency that will hold together and isn’t too wet, but it’s easy to add more oats if it is.
One note of caution, these chocolate coconut energy bites taste SO GOOD that they are difficult to not eat in one go straight from the bowl. But hey, at least they’re great for you if you do, right?!
- 125g / 5 scoops chocolate or vanilla protein powder
- 3 heaped tbsp peanut butter (crunchy or smooth)
- 1 level tbsp cocoa powder
- 200g rolled oats
- 100g dessicated coconut
- 1 tsp honey
- dash cinnamon
- large pinch salt
- 2-4 tbsp almond milk
- plus another 50g dessicated coconut
- In a food processor, combine the protein powder, cocoa powder, oats, cinnamon and salt and add the peanut butter, honey and almond milk. Pulse until everything is combined and sticky but not wet. If it's too wet, add some more oats, and if it's too dry and failing to come together, add more peanut butter or almond milk.
- Pinch off walnut sized balls of mixture and and roll (grease your hands in a little sunflower oil first) into ball shapes, then roll in dessicated coconut. Store in the fridge for up to a week!

These are DANGEROUS around me!!! Lol. Growing up in Newfoundland a traditional Christmas treat youβll find in most homes are Newfoundland Snowballs , which are similar to this recipe but chock full of sugar and butter. I was looking for a healthier version and may I say yours is absolutely perfect! I still may have to put a lock on my fridge though. I CANT STOP AT JUST 1….OR 2…..Lol. They look great. Just wondering why there are two separate entries for dessicated coconut, 100g and 50g? Is the coconut just for rolling in?
