Easy healthy dinners : veggie burgers

Veggie / burgers.

It kind of sounds wrong huh – they seem like opposite things, like healthy/unhealthy. And burgers aren’t generall healthy, but this vegified version is chock full of goodness. Hell, its your five a day in one fell, delicious swoop.

Did I mention its delicious? And easy. So easy too. To make the burgers, from start to finish, all thats required is a little light chopping and 20 minutes in the oven. Do like I did and make a batch of veggie burger mix to store in the fridge and you can whip them up with even less prep!

Get started with diced onions, sweet potatoes, courgettes, sweetcorn and peppers in a bowl along with some oats and breadcrumbs. Thats what I used but you can really use any veggies in these burgers. The oats/breadcrumbs are essential though. It would also be nice to put some grated cheddar or goats cheese in there.

As well as the veggies, you’ll need something to help the veggie burgers to stick together.

Enter beans! Mush them up with a fork and they help your veggie burgers to bind together.

Mashed butter beans – they worked okay but a moister bean would have been better – such as black beans, or using a tin of 3 bean salad mix would be ideal too.

Mix everything up and add some salt, pepper and cumin (some herbs would be great too). The resulting mix was fairly moist but I managed to squish it together into burger patties.

Cook in a preheated oven at about 180 degrees for around 20 minutes. It would be great to add some cheddar cheese on top during the last few minutes too to make it into a veggie cheeseburger.

I served with sweet potato wedges and a MASSIVE toasted bun slathered in mayo for that Golden Fleece veggie burger experience!

    I like to use black beans in my veggie burgers…and just whatever veggies I have on hand…yum!! I think i’ll just have to make up some veggie burgers tomorrow.

    Lovely. I had a veggie burger at the Yorkshireman, red lentil and chickpea, it would have been nice but the chef put way too much salt in and ruined it. I would like like to try a chickpea & bean burger only. xxx

      You can make your own dead easy. They’re really yummy! And really healthy too

    Yummy! I’ll be trying these but perhaps one just packed with different types of beans. Chickpea and red onion burgers are yummy but they involve a lot of mashing, egg yolk and then frying which = messy!

      Ah yeah I don’t imagine chickpeas would hold together well – too dry. Try a can of 3 bean salad, they mash up a treat and you don’t need eggs to bind.
