No Bake Carrot Cake Balls

  • 3 large carrots, peeled
  • 2 medium dates
  • 100g rolled oats
  • 35g pecan nuts (or omit if you prefer)
  • 100g dessicated coconut
  • 1 tsp cinnamon
  • pinch salt
  1. In a food processor, blitz the carrots with the dates, oats and cinnamon. Add salt, then taste the mixture and add more salt or cinnamon, or a little maple syrup to taste.
  2. Roughly chop the pecan nuts and add to the mixture. Using your hands, scoop walnut sized portions of mixture and firmly squeeze and roll them into balls. Roll in dessicated coconut (or leave plain) and store in the fridge for up to a week.
