I’ve always wanted to bake cookies that looked like this
I think I’m getting there.
These are the ones I made this week
If it weren’t for that damn unattractive one front and centre…. but overall I was really happy with them! I have had the problem of cookies spreading out too much in the past but that didn’t happen using this recipe.
- 245g butter
- 300g golden caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 175g plain flour
- 250g chocolate chunks (I used a big bar of bournville and two small bars of cadburys spots and stripes!)
- Melt butter and allow to cool, then add sugar and eggs, then vanilla, baking powder, chocolate and flour! The mixture should come together to something like the below. It didn’t look to me like it had enough flour in, but don’t worry it will be fine
At this point, I used half of the dough to make cookies by transferring a head tablespoon worth of dough onto a baking tray at a time – I didn’t flatten or spread out the cookie dough at all, as that happens by itself as they cook.
I also put half of the dough in the freezer in a log shape so that I can make cookies again in a couple of weeks. This is also a good time to mention that frozen cookie dough is an extremely delicious snack especially when the weather is hot.
Not that I know that from experience.
Here is a finished cookie! I love how you could still see the word ‘Cadbury’ on the chocolate chunks!
