Mother’s Day is fast approaching so I thought I’d pull together some inspiration if you’re planning on baking something for your lovely mum! I’m always drawn to fresh, zesty spring flavours like lemon and other fruits, but that may be because my mum is a total lemon addict! If your mum is more of a chocoholic, have a look for chocolate baking inspiration here. I can recommend the bounty-stuffed brownies and rocky road cupcakes, sooo good!
Mary Berry’s Lemon Cake with Marscapone Icing is a showstopper and perfect for anyone who loves the combo of lemon and cake. Marscapone frosting is just perfect to cut through the richness too, just like the cream cheese frosting that I adore.
If you’d like to make something a little more basic, this blueberry lemon trifle is a brilliant idea. Simply combine a good shop-bought lemon loaf cake (Waitrose have good ones) with lemon curd (homemade is wonderful, but shop-bought it also delicious), lemon yoghurt, and blueberries. Top with lemon-spiked whipped cream or more yoghurt and you’ve got the perfect dessert for Mother’s Day Sunday lunch!
