With Easter just around the corner it feels like we’re finally turning the page into Spring, thank goodness! So I thought I’d share a few of my favourite ideas for lighter Spring/Easter dinners with you…
- Magherita Pizza with homemade ricotta
- Spring Veg and Goat’s Cheese Frittata
- Lemon and Basil Linguine
- Spring chicken with roasted vegetables
- Spring Panzanella
And cute Easter sweet treats too –
- Easter Cookies
- Carrot Cake cupcakes
- Cornflake cakes (what I always end up doing with my easter egg chocolate!)
- Hot Cross Buns
- Creme Egg cupcakes
- Simnel Cake
- Chocolate nests
Have I tempted you – what are you planning on cooking up over the Easter long weekend?
I have always wanted to try hot cross buns π What do they taste like? Is there something that they’re comparable to?
You know what I never knew after being a Catholic my whole life? That the cross on a hot cross bun, was an actual cross. My grandfather was a retired baker who made them faithfully every Easter and they were truly a treat. I just thought they were seasonal buns with some delectable icing on top…can’t tell you how silly I felt finding out their genuine symbol. Always enjoy, and eat up…pun intended, whatever you post…your efforts are admirable Kerry and you can see how you perform them with such joy and love.
Great point – sometimes things like that just aren’t obvious to us! I’m going to try making them for the first time this Easter, will report back!
Think of my grandfather…let him be your muse π
Love the veg and goat cheese fritatta and those cookies look delish!
Thanks! So much yumminess
I really want to have a go at hot cross buns but I’m a little scared! I think I’ll have to do a lot of research in to the best (aka most straightforward and idiot proof) recipe!
I will also be making a HUGE triple layer chocolate cake for my mum as she gave up cake and chocolate for lent π
I’m going to make them for Easter too! Rachel refined that recipe with lots of tests so I’m sure its a good one!
Amazing re the chocolate cake, can’t wait to see it!
