The weather has been very warm here in England lately, so I thought I’d share a few of my favourite warm weather desserts to cool you down in the hot weather.
1. Fruit, fruit and more fruit (and veggies)
You can’t beat fresh fruit when the weather’s hot, especially if its cool watermelon, frozen grapes and cherries. Cold tomato’s cucumber and peppers are also super refreshing.
For a super easy summer dessert, pop melon balls, grapes, strawberries and cherries onto a skewer and freeze for at least 30 minutes. Super refreshing!
I’ve become enamoured of pavlova’s recently – for lots of reasons. They’re easy, they’re quick (on you time, they need about an hour in the oven) and they’re OH SO DELICIOUS. What’s more, the return for the effort you made (scant at best) is a dessert that makes it look like you’re seriously talented.
3. Ice cream cake/semifreddo
Ice cream cake! It’s a delicious combination of ice cream and other bits and bobs of your choice, sometimes layered with cake and chocolate sauce, then frozen, sometimes with other bits in a sort of ice cream rocky road, as in this delicious looking one by Nigella. Either way, its quick, easy, and coooold.
Semifreddo means semi-frozen in Italian, and its an easy soft, scoopable ice cream which doesn’t require an ice cream maker. This strawberry swirl version looks outstanding.
4. Lemon Mousse
I love this zesty cooling recipe lemon posset recipe, plus it only has three ingredients!
Lemon, water, sugar, delicious! Plus, you could experiment with granita in all kinds of other flavours too. Check out this recipe from Willow Bird Baking.
