A simple No Bake Rainbow Cheesecake with a delicious Oreo cookie crust, that’s easy enough for beginners and tastes great too! *suitable for veggies*

This is a super easy recipe and tutorial to show you how to make a bright and vibrant No Bake Rainbow Cheesecake! All you need is a 9 inch springform cake tin, lots of oreos, butter, double cream, cream cheese, vanilla, RAINBOW food colouring, and SPRINKLES!

I love these sets of Rainbow food colours from eBay – they’re cheaper than I’ve seen elsewhere and have free delivery and they come really fast. Sprinkle wise, as people often ask me where I get my BRIGHT rainbow sprinkles from – the answer is also eBay! No wishy washy supermarket sprinkles here please!
I decided to give this Rainbow Cheesecake a Oreo crust to hide the interior so that the Rainbow would be a fun surprise! I used two packets of Oreo’s and mixed some with butter to make a base, and then crumbled up more to press into the sides of the cheesecake. 😍
So how do you make a Rainbow Cheesecake? It’s actually really easy! The base is Oreo’s, and the filling is a delicious mix of double cream and cream cheese with sugar and vanilla bean paste (and rainbow colours of course).
You’ll mix up a big batch of cheesecake mixture (in a stand mixer is good as there’s SO MUCH of it!) by whipping the cream until it’s thick, then stirring in a mixture of the cream cheese, sugar and vanilla.
You’ll then divide up your cheesecake into six bowls and add vibrant gel food colouring to each one, mixing until you get a bright colour that you’re happy with.
Of course it’s not just Rainbows you could make here – use this same recipe and just one colour of gel food colouring to make a fun ombre cheesecake!
- For the base:
- 2 packets oreo cookies
- 150g unsalted butter
- For the cheesecake:
- 600ml double cream
- 600g cream cheese
- 200g icing sugar
- 2 tbsp maple syrup
- 2 tbsp vanilla bean paste
- gel food colouring in red, orange, yellow, green, blue and purple
- For the base:
- Prepare a tall 9 inch springform pan by lining it with clingfilm to help you pull out the cheesecake.
- In a food processor, blitz the two packets of oreos until they resemble small crumbs. Pour half the crumbs into a bowl and set aside.
- Melt the 150g butter and stir it into the bowl with half the oreo crumbs. Tumble them into the pan and use your clean fingers or the back of a spoon or measuring cup to press down very firmly. Pop into the freezer to set.
- For the cheesecake:
- In a stand mixer, whip your double cream on high speed until soft peaks form. While the cream is mixing, combine into another bowl your cream cheese, icing sugar, maple syrup and vanilla. Combine the cream and cream cheese mixtures, stirring gently.
- Next, divide the cheesecake mixture into 6 bowls (so five new ones and the original bowl) and starting with purple, add small pea sized dollops of gel food colouring into each bowl. Mix until you're happy with the colour.
- Dollop your purple cheesecake mixture into the bottom of the tin on top of the oreo crust, and level it off with the back of a spoon. Pop the tin into the freezer while you make the blue.
- Repeat the process as you work through the colours, then freeze, ideally overnight. Before serving, remove from the freezer for 15 minutes and decorate with sprinkles. Cut with a knife dipped in hot water for a clean rainbow effect!
