Today, I slept till nearly noon then cleaned the house. Springs bright sunlight is revealing the grime we’ve been living with all winter so I spent longer than normal cleaning the fridge, washing machine, freezer (and tomorrow I’m going back for the cupboards!) before doing some exercise. I had a great run on the treadmill while watching Bones and burnt just over 500 calories in 45 minutes.
All that meant I didn’t get started on dinner till almost eight, so I needed a meal that wouldn’t take long to cook (under 20 minutes from start to plate).
As part of my attempt to eat healthily, I try to take ‘unhealthy’ meals and make more health-conscious versions of them. I often make spaghetti with vegetables and tomato sauce (I love bertolli tomato sauces, although I try to make things from scratch I am happy to use short cuts as long as they contain only the same ingredients as a homemade sauce I might make would).

In the mix were red and green peppers, red onion, mushrooms, courgette, and broccoli! Nothing beats getting your five a day in one meal!
And here’s the finished meal – served with grated cheese and yummy garlic bread with mozzerella (the least healthy component of this healthy meal but I couldn’t live without garlic bread so I try to exercise portion control here!)
