Happy Friday! I KNOW I say this every week (and yes I’m a little worried by it too) but thank the LORD that it’s the weekend! Even though I had Wednesday off (which didn’t turn out as relaxing as planned – more on that later!), it’s just been a super busy week and I’m in need of some relaxing time!
Last Friday evening I went to the Light Night celebrations in Nottingham with Lee. I was doing social media on the event for work and also managed to see bits of what was going on too which was fun.
I knew that the Rustic Crust were going to be there with their mobile pizza van and I was excited to try some! So was everyone else in Nottingham though and we had to wait for about 50 minutes to get our pizza! It was nice (and hot, which was important!), but I wouldn’t say it was life-changing, certainly not up to the class of what you get at either pilot or das kino in nottingham.
On Saturday I did quite a bit of baking! I used my new kitchenaid to make cookie dough for my bake for Sunday’s Cake Club, and I also made butter bean bake and blueberry and coconut flapjacks for my friend Lucy who’s just had a baby girl – Polly!
On Sunday I went to see Polly with some other friends – she is so tiny and adorable! Here’s me trying not to drop her.
Later on that day I headed to Cake Club with Erin and Finley. We’ve switched venues, from Fellows Morton and Clay, to the Ned Ludd on Friar Lane, which is SO much better. Fm&c were really awful and the staff very rude, but everyone at the Ned Ludd is lovely!
There were some really tempting cakes, like creme egg brownies, a blueberry muffin bundt cake, and a raspberry amaretto cake! I baked a giant cookie and frosted it for valentine’s (like the ones you get at millie’s cookies!). It was SO squidgy and cookie dough like in the middle but I think that may have been because I overloaded it with so many chocolate chips.
On Monday I put up my Nutella Calzones and you guys loved them, thanks so much! I thought you might as I couldn’t find anything similar to them online, and who doesn’t love nutella! If you make them this valentine’s, post them on instagram with #kerrycooks so I can see!
Tuesday was gym day (my fourth circuits class in a row!) and we focused on body weight exercises like planks, squats and crunches. Afterwards I ran home to get started baking my pastel rainbow cake which I’ll share with you soon!
It was amazing the difference making it in a kitchenaid, there’s so much more ROOM for making a rainbow cake! The batter was in danger of spilling over the sides in my old mixer, whereas there’s room to spare in the huge kitchenaid bowl.
As usual, I baked the rainbow layers in disposable 6 inch foil tins, which I much prefer to metal tins for lots of reasons – I don’t have six metal tins, I don’t want to wash six metal tins, and if your cake gets stuck in the tin, you can cut the tin foil and get a spatula completely under the cake to ensure it will come out.
On Wednesday I had the day off from work – hurrah for flexi time! Sadly some builders started making a LOT of noise at about 8am outside, which made me realise how awful it must be for people on nights – there’s no recourse to complain about noise in the daytime. I used the day to decorate and photograph my rainbow cake and do some blogging / tidying, and I also took an unexpected trip to the vets with Milo after I found two massive lumps under his fur.
It turned out that he must have been in a fight with another cat and the wound had become infected – poor Milo! We seem to have caught it before it got too serious as he only had a slight temperature and he’s now got antibiotics to help him feel better. He was SO BRAVE at the vets – I won’t go into detail about what the vet did to him but it wasn’t pleasant and he didn’t complain or bite and scratch. He was pretty glad to come home though!
On Wednesday night I went to Nottingham City WI for our february meeting – a talk from Jordan from Series 5 of The Great British Bake Off! We learned lots of interesting tidbits about the show, which made me realise (even more than before) how much it is a TV show – not necessarily the reality of the situation. I’ll definitely be watching it very differently in future!
On Thursday I took some of the leftover Rainbow Cake into work for my colleagues – they loved it! I do think it was one of the better tasting ones I’ve made – the frosting is SO good with an extra bit of lemon juice to cut through the sweetness! That evening I headed to the gym again for a kettle bell / weights workout with a bit of cardio. I am trying to incorporate more weights into my workouts, but the temptation to jump on the treadmill for 30 minutes and get really sweaty is always there!
Today I’m at work and then heading into the city later on for dinner at Pilot with friends! It’ll be the third time I’ve been there in the last four or five weeks I’ve been there!
Have you got any plans for Valentine’s day? I think we’ll stay in and cook ourselves a delicious meal.

Loving the pastel rainbow cake. I still haven’t made one but I really should at some point this year. Maybe for my nephews birthday? Marty’s birthday? My birthday? 🙂 Also, I know I’ve said it before but I would love to be part of a baking club. I think once I have some more time that I’d like to start one up! I’m currently going to a brunch club once a month and LOVE it! I try to take an unusual, healthy recipe – I like to experiment! I made a cinnamon quinoa bake that was really decent (obviously not as much of a breakfast treat but for what it was – thumbs up!)
