Happy friday, friends!
How has your week been? Did you eat lots and lots of pancakes? I hope there was nutella involved!
This week I finally started handing out wedding invitations – so exciting! I had lunch with both Erin and Edward and handed their invites over. Me and Edward went to a local spot in Nottingham for lunch – they had cute coffee pots just like in an American diner! This made me happy.
This week in healthy eats – I made deliciously Ella’s lentil, sweet potato and coconut curry and it was indeed delicious! I made it slightly differently to the recipe using a large saucepan; chucking in onions, peppers, mushrooms and green beans before adding spices, garlic and a tin of chopped tomatoes and a tin of coconut milk, plus about a third of a packet of red lentils – I loved how spicy it was and it tasted amazing topped with greek yoghurt and avocado.
For Pancake Day, we had friends over and had a delicious dinner of breakfast! With veggie sausages and bacon, scrambled eggs, hash browns and toast, followed by a dessert of chocolate chip and blueberry pancakes! They were amazing!
I also had lunch with the amazing Erin and Finley – he is getting so big and strong! And bought a pretty new plate from the Cath Kidston sale – too cute!
